Chahan is also called "yakimeshi." Originally a dish from the Japanese-style Chinese cuisine (Chuka), this dish is so popular that you can find it anywhere in japan, from family restaurants to company restaurants.
Ingredients are small pieces of pork/shrimp/crab, onions, cooked egg, fish cake and peas. Chahan is often served with small bowl of clear soup on the side.
Different from fried rice found in authentic Chinese restaurants, as it uses the stickier Japanese short-grain rice and is flavored with soy sauce. A good way to use left-over rice.
Chahan may have originated from Chinese immigrants arriving around 1860 in the port of Kobe (in Chinese, chahan is "chaofan").
